Kashkaval (Búlgaro y macedonio: Kашкавал) es un queso específico de color amarillo que se elabora con leche de oveja; es muy popular en Bulgaria y República de Macedonia, el término se emplea a veces de forma general a los quesos de pulpa amarilla (o incluso a cualquier queso como la Sirene.) En las traducciones del búlgaro para los menús la palabra "кашкавал" se traduce por regla general como "queso amarillo" (mientras que la sirene se traduce como "queso", sin el adjetivo y en ocasiones como "queso blanco"). De forma similar en Rumania el Caşcaval se emplea para denominar de forma genérica a los quesos amarillos. La palabra Kashkaval proviene de Caciocavallo, un queso italiano similar al provolone.
