Khachapuri (Georgiano ხაჭაპური xač’ap’uri o "pan de queso") es un pan relleno de queso procedente de la cocina de Georgia. El pan se elabora con levadura para que crezca de tamaño durante su elaboración y puede tener diversas formas El relleno contiene por regla general queso (fresco o curado), huevo y otros ingredientes diversos.

Variantes

Diversas regiones de Georgia poseen su propio y distintivo khachapuri. El más común es probablemente el Imeretian Khachapuri de la provincia occidental de Imereti. Otra versión popular de khachapuri incluye el Ajarian (a veces conocido como Acharuli/Adjaruli), Mingrelian, y abjasio (conocido comunmmente como khachapuri Achma).
