Los sfogliatelle (denominados también en italiano como sfogliatella) corresponden a un dulce típico y tradicional de la cocina napolitana, lugar de donde es originario. Se denominan así por emplear la pasta sfoglia u hojaldre ("muchas hojas").

Características

Se trata de un dulce elaborado sobre muchas capas enrolladas para formar el hojaldre. Se suelen rellenar de pasta de almendras.

Variantes

A lo largo de Italia existen diferentes sfogliatella, no obstante la auténtica sfogliatella napolitana se denomina: sfogliatella riccia y se distingue de la sfogliatelle frolla empleada fuera de Nápoles.
